A dynamic Organic Primitivo from Puglia, Volere Volare was made to convey the generous spirit of the south with a contemporary spin. Its name conjures freedom and vitality. Hand-harvested grapes are used to make it, which is vinified in rotating fermenters; after a brief maceration, it ages for twelve months to develop balance and complexity.
In the glass, it’s very fragrant, with appealing notes of chile, rosemary, and sage flower. It surprises on the palate with a burst of blood orange juiciness gently enveloped in gentle tobacco aromas and velvety tannins.
Though its grace lets it be savored even somewhat chilled—an uncommon flexibility for a southern red—its structure makes it ideal for food.
