Description: A Vermentino Reserve with great ambitions, the result of careful selection in the vineyard and in the cellar, with a rigorous vinification process. This Vermentino represents the highest expression of our grapes, vinified in purity to enhance the peculiarities of the grape variety.
Characteristics: The fully ripe grapes are promptly destemmed after a night of rest in the vineyard. A slow fermentation with specific varietal yeasts takes place at a controlled temperature, not necessarily too low. The wine is then left to mature in tanks and large cherry wood Tonneau barrels for 6 months after a skillful batonnage. It is bottled the following year and requires another year of bottle aging at a controlled temperature before being offered for sale. During this time, it gains roundness and significant complexity, with hints of sea and spring flowers, notes of eucalyptus, honey, and oleander.
Origin Vineyard: From the oldest vineyards, over 40 years old, located to the southeast where the cool morning exposure helps preserve the organoleptic characteristics of the grape variety.
Harvest: Traditional, manual in crates, promptly destemmed right after harvesting.
Organoleptic notes:
- Appearance: straw yellow with greenish reflections.
- Nose: expresses subtle, refined, and delicate notes of citrus fruits, white flowers, and lemon balm.
- Palate: it is fresh, dry, and crisp, characterized by a pleasant savoriness and good persistence.
Pairings: A delicate character suitable for pairing throughout a meal: from fish dishes to grilled seafood and delicate fish, to shellfish, and intense cheeses that skillfully complement this exceptional wine with its unique and distinctive characteristics.
