Description
Colle dei Marmi takes its name from the road bordering the first vineyard planted on the estate and represents the first modern experiment of Fiano cultivation and winemaking in the Castelli Romani. Given the volcanic soils where this grape thrives, it was only natural to attempt its cultivation along the slopes of the Lazio Volcano.
Carefully selected grapes are fermented at controlled temperatures in large wooden barrels and stainless steel tanks. The wine then matures on its fine lees in cement vats and large barrels for six to eight months, followed by an extended refinement period, making it a limited-production wine.
With a straw yellow color and golden reflections, it reveals aromas of ripe yellow fruit, pineapple, subtle vanilla, and acacia honey. On the palate, it is mineral and fresh, with a well-balanced acidity and a long, dry finish.
Perfect for seafood, white meats, and aged cheeses, Colle dei Marmi is a refined and expressive white wine, embodying the essence of Lazio’s unique terroir.
Organic Winemaking Approach
The winery follows a certified organic farming method that prioritizes sustainability and environmental respect. Chemical herbicides are entirely avoided, with only mechanical methods used for weed control. In the vineyard, natural treatments like algae extracts and nettle infusions replace synthetic substances, while biodiversity is actively preserved, ensuring a balanced ecosystem. The result is a low-impact cultivation that enhances both the quality of the grapes and the health of the environment.
