Distillerie Bonollo

Our Story

The history of our distillery is deeply intertwined with the lives of passionate individuals who dedicated their lives to the art of distillation. Despite the changes and evolution required by the times, the Bonollo family has chosen to honor their roots and the stories of the past, using these teachings to craft a modern approach.
1908
This year marks the earliest documented distillation activity attributed to Giuseppe Bonollo in Fara Vicentino.
1951 – 1964​
In this period, Umberto Bonollo, one of Giuseppe's sons, established his own distillery in Mestrino (Padua), where the company's headquarters remain to this day. Later, in 1964, he inaugurated a new distillery in Conselve.
1972
Giuseppe, Umberto's eldest son, conceived the idea of creating the first Grappa di Friularo by distilling the pomace of the eponymous grape variety in its purest form.
1978 - 1982
The company acquired the historic Modin and Dalla Vecchia distilleries, strengthening and integrating its production know-how with that of these prestigious, centennial companies.
1995
The fourth generation joined the company, promoting research and development to perfect the Bonollo Unique System (S.U.B.): over 170 years of distillation experience combined with the most advanced technology to produce spirits distinguished by undisputed quality.
1999
The first bottle of Grappa OF Amarone Barrique was sold, created at a time when barrel-aged grappas were not yet available, with the aim of crafting an incomparable grappa.
2015
After a long and intensive effort, a special grappa was created to bring its unique personality to mixology, addressing the versatility needs of bartenders.
2016
The company was honored at Montecitorio as “Eccellenza Italiana,” a prestigious award given to 100 Italian companies that have distinguished themselves in terms of quality, creativity, and excellence.

S.U.B. (Bonollo Unique System)

Born from the combination of Casa Bonollo’s centuries-old experience with the most innovative distillation systems, the Bonollo Unique System (S.U.B.) represents a true company philosophy. This philosophy underpins every stage of the production process and aims to enhance the pomace. It is reflected in every aspect of the process, from raw material collection and controlled storage, to flexible distillation, aging, bottling, and the sustainable management of by-products.

Careful Selection

To produce high-quality grappa, it is essential to start with aromatic-rich pomace.
Therefore, freshly obtained pomace from vinification is quickly transported to our distillery,
where it is inspected and selected by our experts.

Distillation at Bonollo

Thanks to a well-established know-how passed down through generations,
the Bonollo family has created a system where flexibility and quality control
are key to producing spirits with rich and distinct personalities.

Barrel Aging

Bonollo's master distillers excel in the art of barrel aging,
a crucial phase during which the slow maturation in wood evolves the grappa's character,
enriching it with pleasant spicy notes.
This delicate process requires great expertise and is conducted in sealed environments
under the supervision of customs officials.

Hand-Finished Bottles

Each bottle is a unique piece, meticulously crafted throughout every stage of packaging.
Every single OF decanter is hand-polished and sealed before being placed in its box,
following verification by our experts to ensure it meets the quality standards of its contents.

By-Product Valorization

The S.U.B. extends beyond the production and packaging of the distillate, encompassing all processes for valorizing by-products with a concrete approach to circular economy.

Our Barrels

The masters of Casa Bonollo understand this and for over a hundred years have been utilizing time and nature to create unique distillates whose personalities are elevated through barrel aging. This delicate process requires wisdom and balance and must be conducted in sealed environments under the control of customs officials.

Barrels
Slavonian Oak Wood

Primarily used for large barrels, Slavonian oak imparts vanilla notes and tannins to the grappa. For instance, our OF Grappe mature here.

Small Barriques
French Oak Wood

French oak gives grappa a refined and elegant structure, enriching it with spicy notes and aromas. Our Grappa OF Amarone Barrique and Grappa OF Vintage Sei Stelle mature in these barrels.

Casks
Other Types of Wood

For special aging processes, other woods (e.g., cherry, ash, or oak) can be used.

The Ancient Art of Coopers

Like many ancient trades, coopering is a true art passed down from father to son for generations, intimately tied to wine. This tradition blends experience and wisdom, artisanal skill, and folklore. From selecting the tree to seasoning, from choosing the staves to shaping them: each stage is meticulously attended to, culminating in the toasting process, which is done over an open flame.

The Golden Moment

High-level wood aging is indeed an art, as not everything is scientifically defined even today. Therefore, the expertise of Bonollo’s cellar masters is crucial: they are entrusted with monitoring the grappa’s maturation and seizing the golden moment—the point at which the grappa reaches its peak expression and perfect balance between its original aroma and the flavors acquired from the wood.
